Support local music and buy a cookie while you're at it!

This coming Wednesday you are going to want to be in Portland for the Selbyville CD release show with Plains and DJ Old Furnace.

Selbyville is a local band with members Derek Kimball (of Last House Productions), Artie Fischer (of Tea First Records), and Michael Kamin, who lives in Pittsburgh, PA. This is Selbyville's 5th release, titled "Mansions," and the group will perform live at the Apohadion to celebrate. YAY! They'll be joined by Plains (Erin Sprinkle, Dave Noyes, Pat Corrigan, Jeremy Robinson, and Jerusha Robinson) and DJ Old Furnace who I've never heard, but will probably love since I already love the other two bands!

Justin and I are very good friends with Derek Kimball and his lady, Erin Sprinkle - by very good friends, I pretty much mean we're like family. I was nervous, but I got up the courage and asked if he thought it would be cool if I baked up some of my vegan awesomeness (become a fan if you haven't yet!) to sell at the show. My inquiry was greeted with open arms and I'm officially baking for the show. Woot woot!

The question now is: What do I bake? I'm thinking about doing mini cupcakes, perhaps the pumpkin/apple topped with a nice vanilla no-butter cream frosting and then some cookies. Awesome Crunch is definitely one of the most popular cookies I make, so maybe that.

I was also thinking it might be fun to try to do Selbyville's album cover on a sugar cookie, but that might prove to be fairly difficult as it's a fairly intricate design. We'll see! I like a good challenge. The last time I did this, it was for Last House Production's premier of The Bully at SPACE Gallery and I was able to do the movie's poster on sugar cookies pretty successfully.

Whatever I end up doing, I'm excited. I'm stoked to hear some amazingly talented musicians play their hearts out, ready to hang out with friends, and so happy I can share some of my baking with people (it's been a while). I'm sure Justin will have his camera in tow, so I'll be sure to report to you after the show on Wednesday! And...if you're in the Portland area - COME!

Making do with an emptying fridge

Last night, after finishing my last baking order for the week, I peered into the fridge for dinner ideas. A lone cucumber, bag of carrots, and emptying jar of salsa stared back at me, daring me to make my move. As I uttered comments of discontent, Justin yelled in and said, "Let's just order out." I thought about it, but then I thought, No way! We need to save money because we may be moving in a month or two and we've eaten out too much lately (our original goal of one eat out pass per month has fallen by the wayside recently). I mustered up courage, flung the fridge back open, and rolled up my sleeves.

Our pantry is always well stocked with grains, so I pulled out the rice cooker and started a batch of brown rice. Then I heated a skillet with some olive oil and added the rest of an onion - less than a 1/4 cup, but hey, at least it didn't get wasted. After the onion was cooked, chopped up 3 carrots and threw those in. I followed with beans and some spices, and ended up with a really nice Mexican rice and beans dish. Ta-da! My man even went back for seconds. Here's my recipe:

Odds & Ends Mexican Rice & Beans
2 cups brown rice
olive oil
onion, chopped
3 carrots, chopped
1 tomato, diced
1/2ish veggie stock
1 can garbanzo beans, drained & rinsed
1 can black beans, drained & rinsed
1/3-1/2 cup TVP
Mild - hot salsa
salt & pepper
chili flakes
chili powder
cayenne pepper

Heat the onion in olive oil over medium heat. Once onions are translucent, add carrots and cook until they are tender. Add veggie stock, beans, and TVP and cover. Let the mixture simmer covered for a while, allowing the beans to soften, stirring occasionally. You may need to add more veggie stock or water as it gets soaked up pretty fast by the TVP and beans. After 10 mins or so, add in the tomato (I did it here because I didn't want them soggy, but you could add them earlier) and salsa and mix. Add spices - I didn't measure, so just be mindful of how spicy you want it to be.

Serve the mixture hot over the brown rice, or mix it all together and then serve.
Makes 4-5 servings.

And of course after dinner, there were cookies left over from the 3 orders I had this week, so dessert was a cinch :)

So I took some leftovers for lunch, and also brought some cucumber salad. Cucumber salad is SO easy to make and so refreshing when it's hot outside. Pick up some fresh dill and cukes at your local farmers market and just chop them up, throw them in a container with some white wine vinegar, salt and pepper, and let it sit in the fridge for a day or so. Yum!

Lunch: Mexican beans without the rice, cucumber salad, grapes, and a small salad with radish and hummus.

Today's lesson: Even when you think there's nothing in your kitchen, try to make it work and you might surprise yourself with a new recipe. You just need to think outside the box and let the ingredients you have on-hand inspire you!

Cookies, Cookies, Curry, and Udon

This weekend was a doozy. I had a spinal injection done on Friday and, although I should have been off my feet for a majority of the weekend, I had things to do! In the last week I've had 3 baking orders come in for shipping this week. It all just hit me at the same time. So on Saturday I just worked for an hour or so, then laid down for a while, then worked for a while, then laid down...you get the picture. It was pretty annoying and made the baking take SO much longer. By Sunday evening I had completed batches of my vegan Mud Puddle Cookies, Treasure Chest cookies, sugar cookies, and had the dough ready for Linzer Tarts chilling in the fridge.

So in the interest of making things easy for dinner, I turned to my favorite recipe source, Post Punk Kitchen. I brought up Isa's Broccoli Curry Udon recipe and got to work. A few changes - we didn't have any red onion, so we used shallot instead and I don't like my onion crunchy like she suggests so I cooked it until it was translucent. I added about a cup of edamame and a handful of mushrooms and yellow bell pepper for some color, texture, and sweetness.


I made it just like she suggested, but next time I may just throw it all in the wok instead of cooking everything separately. It's still a super easy recipe, either way, and very quick to throw together. 

After dinner, I whipped up 2 batches of my vegan royal icing and got to work icing the first coat on my sugar cookies for a 4th of July cookie order that needs to be shipped by tomorrow at the latest! Eeep! Cutting it close. I was up until midnight icing these guys. This evening I've got to put the finishing decorating touches on them - I'll get a MUCH earlier start than last night - let them dry all night, get up early and package them and then I should be all set.


And then it's off to finish the Linzer Tarts (probably on Tuesday night) and get that package out the door. Phew! I shouldn't complain; I'm always trying to drum up business, which is really hard when you're just starting out, and I'm so thankful for friends who think of me when they want a vegan treat, are having a party, or need to get a special present out to someone. I'll just need to take it easy for the rest of the week to make sure my back heals properly!

And that leads me to asking for your help - I'm on a quest to find a really excellent nutrition/health book that talks about vegan nutrition but also gives suggestions for how various foods/herbs/supplements interact with our bodies and how we can be more in-tune to getting our bodies what they need. I want to learn this stuff and really understand what's going on in my body and how I can make myself feel more healthy. I'm only 26 and sometimes I feel like my body's trying to fall apart on me. Anyone out there have any suggestions?

Vegan Sweets & Treats

Anyone who knows me knows that I have a sweet tooth. My dream is to open a vegan bakery someday and I currently run a humble little baking service out of my apartment kitchen. I recently went through the process of re-naming said service, though I haven't revealed the new name and brand because I have yet to find someone to help me do a logo and re-design of the website....soon though, I hope!

In the mean time, I've been doing some research in my home town. Currently, there are no fully-operating vegan bakery store fronts. This is a major-league bummer! There are several bakeries providing a few vegan treats here and there, but for the most part, they severely miss the mark. There are a couple home-kitchen operations making their name out there, the most successful of which seems to be 13th Cookie. Most recently I've tried two treats worth mention: one, because it was incredibly delicious, the other, because it gives vegan baking a bad rap.

Let's start with the good: Sometimes at work I need something sweet. Does it happen to you? You hit this point in the afternoon when the dream of a good cookie and a cup of coffee or tea lure you to the streets. I typically head to Coffee by Design, a local coffee shop gaining reputation for it's wonderfully diverse selections and local baked goods. I was so pleased to recently discover that they are selling 13th Cookie baked goods. So far I've tried the Almond Butter Chocolate Chip Cookie. Although it was a bit greasy (likely due to the almond butter), it was chewy and chocolatey, and almost brownie-like. And I loved that it wasn't one of those giant cookies most places sell - it was just a normal-sized cookie and was the perfect amount to quench my craving. Bravo, 13th Cookie & CBD! Finally, there is a vegan sweet in town that actually tastes good! 

About a year ago, a restaurant opened up in town called Local Sprouts Cooperative. They serve a wide array of food and their menu includes several vegan dishes (hooray!). Connected to the co-op is the Bomb Diggity Bakery. They offer a variety of baked goods, including several vegan offerings, though they are not a fully vegan kitchen. The concept is really cool - check out their website for details - but in short, they provide services for individuals with intellectual disabilities. I really wanted to like their baked goods, really I did. I want to support them so badly...but...so far Justin and I have tried two things from them and man, were they a let down.

The first was a chocolate-chai cupcake sampled at the Portland Public Market. The cupcake was hard as a rock, overly cinnamony (we're talking mouth-full-of-cinnamon cinnamony), and incredibly dry. The icing was flat and sickeningly sweet. Major bummer.


Then we tried a chocolate cookie. First off, it was a "big" cookie and I just object to those in general. I think Americans have gotten far too used to large portion sizes and cookies should be sized to fit in the palm of your hand. The cookie looked very chocolatey at first glance. It was dark in color and lumpy with nuts and other various surprises. It was extremely greasy, so much so that it was all over my hands. On first bite, I wasn't sure what I was tasting - a cross between a granola bar and bird suet, perhaps? Needless to say, the cookie was guiltily chucked in a trash can on the street. I say guiltily because I feel bad - I desperately want their baked goods to taste good, but alas, they just aren't.

I'm happy to say that everyone who's sampled my baked goods has been delightfully surprised that it's vegan. They say, "This doesn't even taste vegan!" Well - I don't think vegan has a taste, it just is! Baked goods are baked goods. They're meant to be indulgent, they're meant to be yummy and I'm certainly glad that mine are. Meat out!

This has been a week of vegan victories! On Tuesday night we invited our favorite vegan couple to dinner to try out VegWeb's General Tao's Tofu - Delish! The tofu came out surprisingly well and was crispy on the outside and soft in the middle and the sauce was wonderfully sweet and spicy.

We made a few modifications - we added a heaping spoonful of Asian Chili Paste to the sauce (we like spicy!) and instead of just serving it with steamed broccoli (boooooring), we sauteed bok choy, broccoli, bell pepper, and onion in the wok and then mixed all of it together with the tofu and sauce. We served it hot over brown rice - yummers!

For dessert, my friends sampled my two newly veganized cookies - Awesome Crunch and Ginger Snap - for my baking service, From Scratch & Sniff. I got some great feedback and was even told that my peanut butter cookie base for Awesome Crunch is delish, by a non-peanut-butter-cookie-liker! FS&S will soon be a completely vegan baking service - watch out for it, friends, it's gonna be great!


On Sunday, we're going with the same couple over to the Pepperclub for the Maine Vegan Meet Out Group's celebration of National Meat Out! The Pepperclub has a 4 course meal at $22 planned for us and we're very excited to make some new friends and try new foods!

All in all, this has been a great week and on top of it all, the weather outside is beautiful today! Huzzah!

Chocoholics Unite!

I'm trying so hard to stay on track....seriously. I'm not calling this a diet, because whenever I do that, I stay with it for a few weeks/months, lose some weight, then fall off the wagon. Lamesauce. In going vegan, I'm convincing myself that this is a lifestyle, not a diet (despite the fact that I have weight loss goals, shhhh, don't let my brain connect them!).

Thus far, I have spent 1 week of purely eating vegan and have been loving it. I've been sick though, which is really frustrating and is causing me to crave things I don't really need to eat...like cheese or sweets. It's probably not the sickness that's causing the cravings, but the fact that I've been couch-bound for a week and am utterly bored. Boredom = Cravings = No good.

I was going crazy for chocolate on Friday night, so I consulted the Vegan on the Cheap cookbook for an idea to satiate my needs for chocolate in a mildly healthy way. There, towards the back of the book was this recipe for no-bake vegan chocolate peanut butter oatmeal cookies, and let me tell you man, these things are awesome. I am not allowing myself to make them again any time soon though, because between me, my boyfriend and a friend, we finished off the whole batch in a night! Yikes!

Anyway, here they are, but be careful- the are super easy to make and wicked addictive! Enjoy and let me know what you think!

Vegan Chocolate Peanut Butter Oatmeal Cookies (From Vegan on the Cheap)
1/3 cup of vegan margarine (we LOVE Earth Balance)
1 cup of sugar
1/3 cup soy/almond milk, plain or vanilla flavored
pinch of salt
3/4 cup of peanut butter
1 tsp vanilla
2 cups fast cooking oats
3/4 cup vegan chocolate chips

Heat the vegan margarine in a med. sized saucepan over med. heat. After it melts, add sugar & milk. Cook until it almost boils then remove from heat. Add in the PB, salt & vanilla, mix to incorporate. Then add oats and chocolate chips. Spoon out by the heaping Tbsp full onto a wax-paper covered baking sheet. Allow cookies to harden for about 30 mins---we put them in the fridge but you don't have to. Makes about 24 cookies.
